I made Emeril's Hot Corn Dip tonight.
It was yum.
You get the sweet from the fresh white corn, the heat from the jalapeno and cayenne and the creaminess from the cheeses and a dab of mayo. (Can you tell I'm watching the Food Network as I type this)?
Probably not terribly healthy but hey, it's a holiday forheaven'ssake. Live a little.
